Berry Bread Pudding

Ingredients

  • 5 slices whole wheat bread
  • 1 ½ cups berries of your choice

 

Instructions

Clean the dried berries and allow them to dry. Take a small 2 cup deep dish, and layer the bottom with a layer of berries. Then cover the berries with a layer of bread. Continue layering in this way until the dish is full, finishing with a layer of bread.  Cover the dish in plastic wrap and place a bowl over the top of the berry dish that just fits inside. Place another heavy object on top to place weigh on the bread and berries. Leave in the refrigerator for 15 minutes before serving.

 

Diabetic Fruit Pudding

Ingredients

  • 1 can fruit cocktail, drained
  • 1 can mandarin oranges, drained
  • 1 can unsweetened pineapple, drained
  • 1 to 2 apples, chopped
  • 1 lg. package sugar free instant Jello

 

Instructions

Mix together the Jello and drained fruit. Then add the remaining ingredients. Mix well and let this sit for 30 minutes before serving.

 

Diabetic Tapioca

Ingredients

  • 3 tablespoons quick-cooking tapioca
  • 1 egg, beaten
  • 2 ¾ cup fat-free milk
  • ½ cup pineapple bits, drained and unsweetened
  • ¼ cup golden raisins
  • 2/3 cup Splenda
  • 1/8 tsp. salt
  • Ground cinnamon
  • Ground nutmeg

 

Instructions

Excepting the cinnamon and nutmeg, mix all of the ingredients in a medium saucepan. Stirring constantly, heat the mixture to a boil, then remove from the heat and let stand for 20 minutes. Pour into serving dishes and chill in the refrigerator until ready to serve. Sprinkle with cinnamon and nutmeg, as desired, to garnish.

 

Apricot Rice Pudding

Ingredients

  • 3 egg whites
  • 1 egg
  • 1 ½ cups fat-free milk
  • 2/3 cup cooked rice
  • ¼ cup sugar
  • 2 tbsp. snap dried apricots
  • 1 tsp. vanilla
  • ¼ tsp. ground cardamom
  • ¼ tsp slivered dried apricots to garnish

 

Instructions

Begin by preheating the oven to 325 degrees F. Next, combine the egg and egg whites, milk, sugar and vanilla in a large mixing bowl and beat the mixture until thoroughly combined. Stir in the cooked rice, apricots, orange peel, and cardamom. Divide the mixture among 5 custard cups and place on a rectangular baking dish (3 quart). Pour boiling water into the baking dish, creating a 1” depth around the custard cups. Bake, uncovered, for 40 minutes or until the mixture is set, stirring after 20 minutes. Garnish with apricot slivers, if desired. This dish can be eaten warm or chilled.
