When you have to be away from home at lunch time, finding a healthy lunch that is low in carbohydrates can sometimes be difficult. Diabetic lunch recipes can save you a lot of trouble. Most diabetic lunch recipes take into account your need of a healthy balanced meal and the carbohydrate level is usually listed for you.

Easy Diabetic Lunch Recipes

 

We all know that life doesn’t slow down for anyone. So, when you’re a diabetic it is nice to be able to throw a lunch together as quickly as possible. For this reason, some easy diabetic lunch recipes are listed below.

 

Diabetic Broccoli & Cheese Soup

Ingredients:

  • 1 pkg. small cream cheese
  • 2 cups shredded cheddar cheese
  • 2 cans chicken broth
  • 1 cup heavy cream (in fluid form)
  • 1 pkg. chopped broccoli
  • Salt and pepper to taste

 

Instructions:

Begin by heating up the chicken broth in a pot on medium high heat. Meanwhile, in separate bowl, mix together the cream cheese, heavy cream, and cheddar cheese. Place this mixture into the microwave for 30 seconds at a time, stirring each time, until the contents are softened. Mix well.

After the broth becomes hot, stir in the broccoli, and let the soup heat up again. When the soup is well heated again, pour the cream cheese mixture into the pot. Stir continuously until all of the cheese is melted. Add salt and pepper. After the soup warms up once more, turn off the blender, and put half of the broccoli and ¼ a cup of broth into the blender to puree. Serve immediately.

 

Grilled Eggplant

Ingredients:

  • 1 unpeeled eggplant
  • 2 tbsp. extra virgin olive oil
  • 1 tsp. salt
  • ½ tsp. black pepper

 

Instructions:

Cut the top and the bottom off of the eggplant. Discard. Turn on the grill pan on medium-high. Meanwhile cut the eggplant into ½ inch thick rounds. Brush each round with extra virgin olive oil and sprinkle them with salt and pepper on both sides. When the grill is hot, place the eggplant rounds on it and allow it to grill for 3-5 minutes. Then, flip each piece and allow them to grill for an additional 2-4 minutes. These are very low in carbohydrates, so feel free to eat more than one serving, with cheese, or with a salad.
