Cherry Diabetes Cheesecake
Ingredients
- 4 eggs
- 1 cup light sour cream
- 15 graham crackers
- ¼ cup flour
- ¾ cup fat free milk
- 3 tbs. stevia powder
- 2 tbs. light butter, unsalted
- 1 tbs. vanilla extract
- 8 oz. low fat cream cheese
- 1 can cherries
- Cooking spray
Instructions
Begin by preheating the oven to 350 degrees F. Next, spray a 9 in. spring-form pan with cooking spray. To make the crust, crush the graham crackers and combine them with melted butter. Take the crumb mixture and spread evenly over the bottom of the pan. To make the batter, mix the stevia powder and cream cheese, and then add the milk and eggs. Mix thoroughly. Add the vanilla extract, sour cream, and flour and continue mixing until smooth. Pour this mixture evenly over the graham cracker crust. Allow the cake to bake for one hour, and then allow the cake to cool for 4 hours. Set inside the refrigerator to chill. Add a can of cherries with their juice before serving.
Chocolate Swirl Diabetes Cheesecake
Ingredients
- ½ cup graham crackers
- ½ cup of fresh strawberries, sliced
- ¾ cup fat free milk
- 1/3 cup sugar or the sugar substitute equivalent
- 4 oz. semisweet chocolate, melted and cooled
- 2 tbs. butter, melted
- 2 tsp. vanilla
- 1 envelope unflavored gelatin
- 3 (8 oz.) pkg. reduced-fat cream cheese, softened
- 1 (8 oz) carton fat-free sour cream
- Cooking spray
Instructions
Using a medium bowl, crush the graham crackers until they are fine crumbs and then add the melted butter. Mix thoroughly until all of the crumbs are moistened. Coat an 8 in. spring-form pan with cooking spray and then press the mixture evenly over the bottom. Cover and chill this while preparing the rest of the cake. Next, pour the milk into a small saucepan, sprinkle the gelatin over it, and allow it to stand for 5 minutes. Afterwards, heat and stir the mixture until the gelatin dissolves. Remove this from the heat and allow it to cool for 15 minutes.
Use a large bowl to beat the cream cheese with an electric mixer. Add the sour cream, vanilla, sugar. Beat well until well-mixed and smooth. Add the gelatin/milk mixture gradually and beat into the mixture. Next, divide the mixture in half and add the melted chocolate to one of the halves. Half of the chocolate mixture should be spooned over the prepared crust. Then, spoon in half of the white mixture over the chocolate mixture.
Use a narrow spatula (or table knife) to swirl the chocolate and white mixture. Add the remaining chocolate mixture, and then the white mixture, once again. Swirl. Cover this and chill until it sets (approximately 6 hours. Before serving, loosen the cheesecake from the pan with a small sharp knife. Cut into wedges, top with strawberry slices, and serve.
