Diabetic Chocolate Truffles
Ingredients:
- 4 tbsp. Splenda or other sugar substitute
- 2 oz. of unsweetened chocolate
- 4 tbsp. of butter
- 4 tbsp. whipping cream
- 2 tsp. vanilla extract
- 1 oz. of crushed nuts of your choice (optional)
Instructions:
Start by melting the chocolate in the microwave or in a bowl over a simmering pot of water. Be careful not to overheat the chocolate or it will scorch. Stir in the sugar substitute, and allow the mixture to cool to room temperature. Be sure that the butter is at the same temperature as the chocolate before adding it to the bowl. Then stir in the cream, the vanilla, and the nuts if you are using them. When it is all well blended, spread the mixture evenly into a small, parchment-lined loaf pan. Afterwards, chill until firm and then cut into small pieces and store in the freezer.
Diabetic Fruity Chews
Ingredients:
- 3 cups fruit juice of your choice
- 5 gelatin envelopes
Instructions:
Using a medium mixing bowl, soften the gelatin in 1 cup of fruit juice. Meanwhile bring one cup of juice to a boil and stir in the gelatin/juice mixture. Stir as the gelatin dissolves. Afterwards, add the remaining cup of juice and then pour the mixture in to an 8 in. square pan. Refrigerate until the candy is firm. When done, you and your children can cut these chews into shapes with cookie cutters. It’s a great way to spend extra time together.
