Ingredients

  • Cooking Spray
  • 2 cups of quick cooking oatmeal
  • 3 eggs
  • 1 cup of whole wheat flour
  • 1 cup light margarine
  • ½ cup skim milk
  • 1 ¼ cup sugar substitute
  • 1 tbsp. vanilla extract
  • 1 tbsp. cinnamon
  • ½ tbsp. baking soda
  • ¼ tbsp. salt

 

Instructions

Begin by preheating the oven to 350 degrees F. Melt the margarine and add the oatmeal. Mix well. Next add the beaten eggs, flour, baking soda, salt, cinnamon, sugar substitute, vanilla extract, and milk. Use an electric mixer to mix the ingredients well and prepare a baking sheet by spraying it with cooking spray. Diabetic Oatmeal Cookies with Raisins

Ingredients

  • Cooking Spray
  • 1 ½ cup quick oats
  • 1 cup self-rising flour
  • ½ cup light butter
  • 1 egg
  • 1/3 cup Splenda brown sugar substitute
  • 2 tbsp. white Splenda, granulated
  • 2 tbsp. milk
  • ¼ tsp. cinnamon
  • ½ tsp. vanilla
  • ½ cup raisins

 

Instructions

Preheat the oven to 325 degrees F. Next, mix together the flour and the cinnamon. In a separate bowl, cream the butter and the sugars until the mixture is fluffy. Then add the egg, vanilla, and milk. Mix this mixture into the flour mixture gradually. Afterwards, stir in the oats and the raisins. Spray a cookie sheet with cooking spray, and then drop teaspoons full of the cooking in the size which is desired. Bake these cookies for 10-12 minutes, or until the diabetic oatmeal cookies are a golden-brown. Allow the cookies to cool before serving.
