Ingredients

  • 1 cup bran cereal
  • 2/3 cup blueberries
  • 1 ½ cups unsweetened applesauce (or mashed banana)
  • 1 cup whole wheat flour
  • ¼ cup fat-free milk
  • ½ cup oats
  • 2 egg whites
  • 1 tbsp. baking powder
  • ½ tsp. baking soda
  • 1 tbsp. honey
  • 2 tbsp. dark molasses

Instructions

Start by preheating the oven to 400 degrees F. Next, spray two 12 cup muffin pans with cooking spray and line each cup with a paper liner. Combine the cereal, applesauce, and milk in a large bowl and allow this to stand for 5 minutes. Afterwards, add the flour, oats, honey molasses, cinnamon, egg whites, baking soda, baking powder and blueberries.
