Ingredients:

  • 1 can of tuna
  • 4 cups whole-grain noodles
  • 1 medium onion
  • 6 oz. low-fat cheddar cheese, shredded
  • ½ cup chopped celery
  • 1 can cream of mushroom soup

 

Ingredients:

Cook the pasta noodles according to the pasta directions. Drain well and place the pasta back into the pot. Add all of the other ingredients listed above and stir well. Watermelon Feta Salad with Lemon Dressing

Salad Ingredients:

  • 6 cups of mixed salad greens

  • 2 large nectarines

  • 2 tbsp. toasted sunflower seeds

 

Lemon Dressing Ingredients:

  • 3 tbsp. olive oil
  • 2 tbsp. lemon juice
  • ¼ tsp. black pepper
  • ¼ tsp. salt

 

Instructions:

Make the dressing by placing the oil, lemon juice, salt and pepper in a jar with a tight-fitting lid. Put on the lid and shake it until the mixture is well-blended. Set aside. Cut the watermelon into small, bite-sized chunks, discarding the rind and seeds as you do so. Place the pieces into a large salad bowl.

Cut the nectarines in half and pit them, and then cut them in to thin slices. Put the slices in the bowl with the watermelon pieces. Tear the salad greens into bite-sized pieces and place in the bowl with the fruit as well. Toss the salad to mix, and then crumble the feta cheese over the top. Sprinkle the seeds over the top as well, followed by the lemon dressing. Serve immediately.
