Diabetic Oatmeal Pancakes

Ingredients

  • 2 cups buttermilk
  • 1 cup quick-cooking oats
  • ½ cup whole wheat flour
  • ½ cup all-purpose flour
  • 1 egg, lightly beaten
  • 2 tbsp. canola oil
  • 1 tbsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. sugar
  • 1 tsp. vanilla extract
  • ¼ tsp. salt
  • Cooking spray
  • Light whipped cream
  • Assorted berries

 

Instructions

Use a large bowl to combine the oats, flours, sugar, baking powder, baking soda, and salt. Next, in a separate small bowl combine the buttermilk, egg, oil, and vanilla. Stir this mixture into the dry ingredients slowly, combining until the mixture is thoroughly moistened. Pour ¼ of the batter onto a hot griddle which has been coated with cooking spray. When bubbles form on the top, it is time to flip your pancake. Allow the other side to cook until it reaches a golden brown. Repeat this process until all of the batter is cooked. Top with a small amount light whipped cream and berries, if desired.

 

Spinach & Cheese Omelet

Ingredients

  • 2 large eggs
  • 1 cup coarsely chopped spinach
  • 1/3 cup Swiss cheese, shredded
  • 1 tbsp. butter
  • 2 tbsp. water
  • 1/8 tsp. salt
  • 1/8 tsp. pepper

 

Instructions

Use a blender to thoroughly combine the eggs and the water. Then, melt the butter in an 8 inch skillet over medium heat. Add the spinach and sauté for 1 minute or until the spinach has wilted. Next, add the salt and egg mixture. As the egg begins to cook, lift the edges to allow the uncooked portion to flow underneath. Continue cooking in this fashion for 1 minute or until the egg is set. Cover the skillet and allow this to cook an additional minute. Turn off the burner, sprinkle the omelet with cheese and pepper, fold the omelet in half, and allow the cheese to melt. Slide the omelet onto a plate. This is best served with whole-wheat toast and/or fresh fruit.
