Raspberry Thumbprints

Ingredients:

¼ cup softened margarine

3 tablespoons sugar

1 large egg white

1 teaspoon vanilla extract

1 ½ cups all-purpose flour, sifted

Cooking spray

3 tablespoons raspberry fruit spread, no sugar added

 

Procedure:

Preheat the oven to 350 degrees F (176 degrees C). Next, in a large bowl, cream margarine and sugar until the mixture is light and fluffy. Add the egg white and the vanilla extract, and then beat well. Stir in the flour in three parts. Now form the dough into 1-inch balls and place them 2 inches apart on a cookie sheet that is lightly coated with the cooking spray. In the center of each cookie, press a hole with your thumb. After baking from 8 to 10 minutes, allow them to cool completely, and then spoon the raspberry fruit spread into the center of each cookie.

Diabetic Pound Cake

Ingredients:

Flour: 2 cups

Eggs: 2 large

Ripe bananas: 3 large

Buttermilk: 4 tablespoons

Raisins: 1 cup

Corn oil: ½ cup

Vanilla: 1 teaspoon

Soda: 1 teaspoon

Liquid sugar substitute: 1 ½ tablespoons

Pecans or mixed nuts: 1 ½ cups

 

Procedure:

Sift flour and soda into a large mixing bowl. Afterwards add in the oil, sugar substitute, and milk. Mix well. Beat the eggs in another bowl, and then add the rest of the ingredients. Beat the mixture. When it is well mixed, poor it into a well-greased and floured tube pan and bake it at 350 degrees F, or 176 degrees C, for 90 minutes.
